Rolo Cookies

These are made by cooking a Rolo inside a chocolate cookie dough. On the outside it looks like a chocolate cookie. When you bite into it, you're surprised with chocolate and caramel.


  • 2 1/2 cups flour

  • 3/4 cup unsweetened cocoa

  • 1 teaspoon baking soda

  • 1 cup sugar

  • 1 cup firmly packed brown sugar

  • 1 cup butter

  • 2 teaspoons vanilla

  • 2 eggs

  • 1/2 cup chopped pecans

  • 48 Rolo candies, unwrapped (9 ounce package)


  1. Combine flour, cocoa, and baking soda; blend well.

  2. In a separate bowl, beat sugar, brown sugar, and butter until light and fluffy.

  3. Add vanilla and eggs; beat well.

  4. Add flour mixture; blend well.

  5. Stir in pecans.

  6. For each cookie, with floured hands, shape about 1 tablespoonful of dough around 1 Rolo, covering completely. Place 2 inches apart on ungreased cookies sheet.

  7. Bake at 375° for 7-10 minutes or until set and slightly cracked. Cool 2 minutes, remove from cookie sheet.
