These are made by cooking a Rolo inside a chocolate cookie dough. On the outside it looks like a chocolate cookie. When you bite into it, you're surprised with chocolate and caramel.
2 1/2 cups flour
3/4 cup unsweetened cocoa
1 teaspoon baking soda
1 cup sugar
1 cup firmly packed brown sugar
1 cup butter
2 teaspoons vanilla
1/2 cup chopped pecans
48 Rolo candies, unwrapped (9 ounce package)
Combine flour, cocoa, and baking soda; blend well.
In a separate bowl, beat sugar, brown sugar, and butter until light and fluffy.
Add vanilla and eggs; beat well.
Add flour mixture; blend well.
Stir in pecans.
For each cookie, with floured hands, shape about 1 tablespoonful of dough around 1 Rolo, covering completely. Place 2 inches apart on ungreased cookies sheet.
Bake at 375° for 7-10 minutes or until set and slightly cracked. Cool 2 minutes, remove from cookie sheet.
