These can be made with or without raisins. Sometimes I prefer using this dough instead of the chocolate chip cookie dough and adding chocolate chips instead of raisins. It produces a more wholesome cookie.
Ingredients
1/2 cup softened butter
1/2 cup virgin coconut oil
1/2 cup sugar
1 cup firmly packed brown sugar
1/2 teaspoon salt
1 teaspoon baking soda
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups flour
3 cups old fashioned oats
1 cup raisins (or 2 cups cups chocolate chips)
Instructions
Cream butter, shortening, sugar and brown sugar.
Add salt and baking soda and cream.
Add eggs and vanilla and cream.
Add flour and mix. Add oats and mix.
Add raisins or chocolate chips and mix.
Spoon golf-ball-sized pieces of dough onto an ungreased cookie sheet.
Bake at 350° for 10-12 minutes. The cooking time depends on the size of the cookie and the oven. The tops of the cookies should be slightly browned.
