Granola



Granola is more of an art than a science. You can mix it up however you like. Try different rolled grains. Use whatever type of nuts you like. Add seeds like pumpkin, sesame, or chia.


Ingredients

  • 3 cups rolled oats

  • 3/4 cup slivered almonds

  • 3/4 cup chopped pecans

  • 1 cup sweetened shredded coconut

  • 1/3 cup real maple syrup

  • 1/3 cup honey

  • 1/4 cup melted virgin coconut oil

  • 3/4 tsp salt

  • 1 tsp vanilla extract

  • 1 tsp almond extract

Instructions

  1. Combine the oats, nuts, and coconut. In a separate bowl, combine maple syrup, honey, oil, salt, and extracts. Combine both mixtures well and press onto a large cookie sheet.

  2. Cook for 1 hour at 250 degrees Fahrenheit. Flip over. Cook for another 30 minutes until golden brown. Periodically open oven door to vent the moisture from the honey and maple syrup.
