English Biscuits

  • 6 cups flour, sift before measuring

  • 3 heaping teaspoons baking powder

  • 2 cups white sugar

  • 1/2 teaspoon salt

  • little nutmeg

  • 1 cup shortening

  • 1 cup plus 1 to 2 tablespoons milk

  • 1 teaspoon lemon extract

  • Raisins


  1. Sift together dry ingredients and add 1 cup shortening.

  2. Mix as for pie crust, use two table knives.

  3. Add enough milk to make a dough. (You may need a little more milk, but add just a little at a time.)

  4. Add lemon extract and raisins to suit your taste.

  5. Form a ball, roll or pat out to ½ inch or so.

  6. Sprinkle with sugar.

  7. Cut with biscuit cutter or top of water glass. Place on greased cookie sheet.

  8. Bake at 375° for about 15 minutes.
