Dijon Vinaigrette



Officially there is no recipe. France's family mix to taste for every meal, not measuring anything. I couldn't take it anymore so I figured out a recipe to ensure consistency...only to find out that you're supposed to vary the recipe by changing vinegars, oils, and adding herbs or honey. Have fun figuring out your favorite vinaigrette with this as a base.I will say Maille brand mustard makes all the difference.


Ingredients

  • 1/4 cup red wine vinegar

  • 2 tablespoons Dijon (Maille brand) mustard

  • 3/4 teaspoon salt

  • 1/4 teaspoon lemon pepper

  • 1/2 cup olive oil

Instructions

  1. Combine vinegar, mustard, salt and pepper, mix very well.

  2. Add oil, mix well.

Note

The Good Seasons salad dressing jar can be used. Fill to the V-line with vinegar. Fill to the W-line with mustard. Add salt and pepper and mix well. Fill to the O-line with oil and mix well.
