Coconut cream pie is a little bit of heaven if you like coconut.
2/3 cup sugar
1/2 teaspoon salt
2 1/2 tablespoons cornstarch
1 tablespoon flour
3 cups milk
3 egg yolks
1 tablespoon butter
1 1/2 teaspoons vanilla
1 cup flaked coconut
Mix dry ingredients.
Cook on medium heat until mixture boils for one minute. Remove from heat.
Add small amounts of hot mixture to egg yolks, stirring each time. Combine and reheat until mixture boils for one minute. Remove from heat.
Add butter, vanilla, and coconut. Cool.
Pour into baked pie shell. Chill.
Top with whipping cream before serving.
