Chocolate cream pies always seems to be a favorite choice at Thanksgiving and any other time when there are multiple choices.
1½ cups sugar
1/2 teaspoon salt
2 1/2 tablespoons cornstarch
1 tablespoon flour
3 cups milk
3 ounces unsweetened chocolate or 1/3 cup cocoa
3 egg yolks
1 tablespoon butter
1 1/2 teaspoons vanilla
Mix dry ingredients.
Add milk and chocolate or cocoa.
Cook on medium heat until mixture boils for one minute. Remove from heat.
Add small amounts of hot mixture to egg yolks, stirring each time. Combine and reheat until mixture boils for one minute. Remove from heat.
Add butter and vanilla. Cool.
Pour into baked pie shell. Chill. Top with whipping cream before serving.
