Belgian Waffles

If you are in a rush, you can skip beating the egg whites separately. I used to do this, but now I am convinced it is worth the extra effort. To make wheat waffles, use wheat flour instead of white flour and use honey instead of sugar.


  • 2 1/2 cups flour

  • 1/2 teaspoon salt

  • 4 teaspoons baking powder

  • 1 tablespoon sugar

  • 1/2 cup melted butter

  • 2 cups milk

  • 1 teaspoon vanilla

  • 4 eggs, separated


  1. Whip egg whites to soft peaks.

  2. In a separate bowl, mix flour, salt, baking powder and sugar.

  3. Mix in milk, egg yolks and vanilla.

  4. Mix in melted butter.

  5. Fold in egg whites.

  6. Use 7/8 cup batter per waffle. Makes about 6 Belgian waffles.
