Banana Bread

I learned at baking school the bananas should be black for best results. This gives the maximum about of banana flavor. Also, I often make a healthier version of this by substituting whole wheat flour for the flour and 2/3 cup honey for the cup of sugar.


  • 1/2 cup coconut oil or butter

  • 1 cup sugar

  • 2 eggs

  • 1 cup mashed bananas

  • 1 teaspoon lemon juice

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3/4 cup walnuts or pecans


  1. Cream coconut oil or butter and sugar.

  2. Add one egg at a time, then add banana and lemon juice.

  3. Sift flour, baking soda and salt together and add to batter.

  4. Mix well and fold in nuts.

  5. Bake 350° for an hour or less. Test center with toothpick. When it comes out without batter on it, it is done.

  6. Cool. Sprinkle with powdered sugar if desired.
