I learned at baking school the bananas should be black for best results. This gives the maximum about of banana flavor. Also, I often make a healthier version of this by substituting whole wheat flour for the flour and 2/3 cup honey for the cup of sugar.
Ingredients
1/2 cup coconut oil or butter
1 cup sugar
2 eggs
1 cup mashed bananas
1 teaspoon lemon juice
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup walnuts or pecans
Instructions
Cream coconut oil or butter and sugar.
Add one egg at a time, then add banana and lemon juice.
Sift flour, baking soda and salt together and add to batter.
Mix well and fold in nuts.
Bake 350° for an hour or less. Test center with toothpick. When it comes out without batter on it, it is done.
Cool. Sprinkle with powdered sugar if desired.
